It has been grown in the wetlands of Mithilanchal, Bihar for centuries — harvested by hand from the beds of ponds and lakes, dried in the sun, and eaten as both food and offering. The farmers who grow it have perfected a crop that is naturally high in protein, low in calories, and completely gluten-free.
